Um, cannot wait to be taken back to childhood with these sweet treats. Jumbo gingerbread folk, are you kidding me? Note the “jumbo” here, they’re not like your average sized cookie, they’re ginormous, edible, gingerbread men….delicious.

7 cups (910 g) all-purpose flour

4 teaspoons (12 g) cinnamon

4 teaspoons (12 g) ground ginger

1-1/2 teaspoons (11 g) salt

1 teaspoon (6 g) baking soda

1 teaspoon (3 g) ground cloves

1/2 teaspoon freshly ground nutmeg

1 cup (227 g)(2 sticks) unsalted butter, at room temperature

1 cup (235 g) packed dark brown sugar

1/2 cup (100 g) granulated sugar

2 large eggs, cold
