Raspberry, kiwi and yogurt popsicles
(Makes 4 popsicles – will vary depending on size)
These popsicles are simple, healthy, and slightly festive – perfect for a quick refresher during the Australian Christmas season!
– ¾ cup raspberries
– ¾ cup diced kiwi
– ¾ cup Greek yogurt
– Sugar/honey (optional)
– Popsicle sticks
- Popsicle mould (or paper cups)
1. Blend raspberries and kiwi separately in blender or food processer. Feel free to add a few teaspoons of sugar or honey to sweeten the pops. Place into piping bags (or pitchers) – I find this a lot easier to transfer into the moulds.
2. Pipe the first layer of your popsicles – mix it up for variation! If you want clean lines between the layers, freeze for approximately 15 minutes before piping in the next layer. Continue to do this until the moulds are full, then insert the popsicle sticks and freeze overnight!
3. Take out of freezer 5 minutes before serving – you may need to run the moulds under warm water to release the popsicles. Enjoy!
